Revamped Home Fries with Labneh and Fresh Fennel Oil

Ever order too much and take it home, then decide to vamp it up? Me too.


I reheated leftover home fries in a frying pan with a bit of olive oil until crispy, added Zi Spice curry powder and garlic, and paired them with homemade labneh and fresh fennel oil.



How to Revamp Home Fries


Ingredients:

- Leftover home fries

- 1-2 tablespoons olive oil

- 1 teaspoon Zi Spice curry powder

- 1 clove garlic, minced


Instructions:

1. Heat a frying pan over medium heat with olive oil to coat.

2. Add the home fries, spreading evenly.

3. Cook, stirring occasionally, until crispy (5-7 minutes).

4. Add minced garlic, cook 1-2 more minutes.

5. Sprinkle with curry powder, toss to coat.

6. Serve with labneh and fennel oil.




Labneh Recipe


Ingredients:

- 2 cups plain yogurt

- 1/2 teaspoon salt


Instructions:

1. Line a strainer with cheesecloth over a bowl.

2. Mix yogurt and salt, pour into strainer.

3. Cover and refrigerate 24-48 hours until thick.

4. Store labneh in the refrigerator.

Fresh Fennel Oil Recipe


Ingredients:

- 1 cup olive oil

- 1 bulb fresh fennel, chopped


Instructions:

1. Heat olive oil in a small saucepan over low heat.

2. Add chopped fennel, and simmer gently for several hours.

3. Remove from heat, cool, and strain.

4. Store in a cool, dark place.
